The fourth recipe is another way to use Walleye fillets, but there are
vegetables and other things to give it more flavor.
First, you get some 2 lb Walleye fillets. Then, add one third cup of
green onions, a cup of sliced mushrooms, ground white pepper, a
tablespoon of crumbled leaf marjoram, two tablespoons of white wine and
two teaspoons of lemon juice.
Then add a fourth of a cup each of shredded cheese (preferable Monterey
Jack) and fresh bread crumbs. Finally, you need a stick of melted
butter and two tablespoons of parsley.
Butter your baking dish, which should be large enough to hold the fish
even if it overlaps slightly. Your oven should be preheated to 400
degrees Fahrenheit.
Take the mushrooms and green onions and spread them over the bottom of
the baking dish, under the fillets. Sprinkle the fillets with marjoram,
salt and pepper, and add the rest of the ingredients (lemon juice,
wine, cheese and bread crumbs). Lastly, pour the melted butter on top
of everything else, then bake for four minutes. After you bake them,
put aluminum foil on the baking pan, without sealing the
edges you need to let heat escape. Finally, bake the fillets
for seven more minutes or until it is done as well as you want it. Test
it with a spatula the spatula should come out of the fillets cleanly.
For the last recipe, you can bake Walleye fillets and serve them with
rice and other dishes. This dish is particularly good for Walleye
recipes.
First, you need four ounces of butter, half a chopped onion, and an
8-ounce can of chopped mushrooms. Take eight Walleye fillets, a stick
of butter, six ounces of almonds (sliced), and a cup of uncooked wild
rice. Salt and pepper are optional, but they will add flavor to the
dish, so use as you like.
First, take the wild rice, slow cook it until its done and
then drain the water. Take a small piece of the butter (about 4
ounces), saute your onions so that they become nearly transparent. The
wild rice and mushrooms should be added next after you cook the
mushrooms.
After you have done this, season the fillets with salt, pepper or
whatever else, then roll them in the bread crumbs. Put them in the oven
to bake at 450 degrees Fahrenheit for at most 15 minutes or so. The
rest of the butter will be used in another pan to
sauteethe almonds.
After this, you can either serve your rice as a side dish or mix it in
with the fillets. For additional flavor, cover the fillets with the
almonds and butter.
